Freezer Cooking All Done!

 

I did the majority of my freezer cooking on the first Saturday of the month.  I thought I was done with it.  That was until I was walking through Bashas this past Sunday (a week after my freezer cooking day) and the manager makes an announcement: 

Attn: Bashas’ Shoppers!  Special Sale! Extra Lean Ground Beef $0.90/lb First come first serve!  There are about 4 packs …..first come first serve! 

And just as any frugal shopper would do I turned my cart and headed for the meat after declaring out load “consider it gone!”  Oh how my Husband would have been embarrassed if he had been with me! 

I was able to get 2 of the packs – about 12 lbs of extra lean ground beef for just $10! 

So tonight I added 8 more mini Meatloaf and a TON of meatballs!  Do you have any idea how many meatballs you can get out of 6 lbs of beef?  A LOT!  I had to bake them on three sheets and the last batch was so full, I was just so done with beef for the night! 

All and all I made:12 Mini Meatloafswe will eat these 2 at a time.  One has onion and one doesn’t. They are the perfect size for dinner and left overs for both of us for lunches4 Marinated Chicken Breast – 2 Teriyaki and 2 Garlic 
6 Frozen Smoothies  I made strawberry
4 Garlic Breads  
3 LasagnaThese are great right from the freezer into a pot of sauce along with sub bread and mozzarella cheese!  The best subs!  Or with spaghetti or how my girls like them … plain!

Meatballs

Shredded Chicken – We have 6 bags of shredded Chicken left over.  I cooked all the chicken in the crock pot for 6 hours and then shredded it.  This made a TON of meat.  We had plenty for our taquitos with some left for tacos!  These are packaged in the right portion for dinners plus lunch left overs!  Chicken Tacos with corn tortillas has quickly become one of our regular favorites! 

Corndog Nuggets  We have enough of these for I would guess 2 Saturday Lunches.  These were surprisingly good but just about impossible to get the batter to stick to the hot dogs.Taquitos  These we are pretty proud of!  I would guess we could have these for 5 more dinners and we’ve already had them for 3 dinners!  We made about 50 of them!  And because they are larger than what you get in the frozen food section they fill you up much faster!  My husband was in charge of frying them and found that if you left the toothpick in them while they fried they were easy to flip over and to get out. 

We ended up with more food then planned but that’s alright with me!  I know the meatloafs will carry into next month and maybe some of the other foods we made will too!  Next month I want to try making baking mixes and freezing cookie dough in rounds so they are ready to go!

  2. You are amazing with your meal planning and preparation! I know I could do the same thing and have ready to go dinners waiting in the freezer, but I just don’t! I wait until 5pm and then panic! Would you be willing to post some of your recipes? I am most interested in the homemade taquitos and corn dogs – yum! Thanks!

    Absolutely! You really should give it a try! Maybe start with just a mini cooking day and see how it goes then see how much you love having dinner ready at 5 pm instead of just starting to think about it! I used to hate picking whats for dinner but now that I do it all at once for the week its a non-issue!

    I am going to post our taquito recipe soon and I will try to get the corn dog nuggets one up too! Man those were a bit hard to make! They aren’t the prettiest but they are tasty!!!
